GERENZANO – Villaggio Amico, Residenza sanitaria assistenziale e centro polifunzionale che si trova a Gerenzano, è stata premiata ieri sera nel corso della XIV gara nazionale Ristorazione di qualità nei Centri di servizi alla persona organizzata da ANSDIPP (Associazione nazionale dei manager del sociale e del sociosanitario), per il piatto più equilibrato dal punto di vista nutrizionale. La ricetta vincitrice – il cubo di tonno rosso del Mediterraneo cotto a bassa temperatura, con rosti di patate al selenio, carota caramellata, maionese ai tre colori e croccante di pistacchio salato – è stata preparata dal cuoco della Rsa, Angelo Fugazza, e dall’aiuto-cuoco, Elvira Buonomo, i quali hanno rivisitato in chiave moderna un piatto tradizionale legato ai ricordi di un ospite di Villaggio Amico, il signor Orazio.

Un piatto ‘funzionale’ pensato ed eseguito per andare incontro alle esigenze nutrizionali e alla palatabilità degli anziani ospiti della Rsa poiché preparato con ingredienti ricchi di sostanze nutritive benefiche per la salute degli over 65.

Dice Marina Indino, direttore generale area tecnica operativa e responsabile comunicazione e marketing di Villaggio Amico: “Siamo molto orgogliosi di aver ricevuto questo premio poiché conferma tutta l’attenzione e la cura che la nostra struttura dedica all’alimentazione dei nostri ospiti. I cuochi sono stati bravissimi perché hanno creato un piatto moderno ed elegante partendo da un racconto lontano e ricco di tradizione”.
